Flan!

You know what’s awesome?  Having a husband who likes to cook.  You know what’s even more awesome?  Having a husband who enjoys learning to cook new things, things like pumpkin flan.

Flan always sounds like a boring dessert to me but then I eat it and I remember that it is delicious.  Especially when it is pumpkin flavoured.

Tonight we’ll be making chard and fennel pie, except with different greens because chard appears to be in short supply in south London right now.

Last night was a truly awesome butternut squash and pear soup (mostly just to use our new handheld blender (LOVE!)) but happily it was also totally delicious and pretty easy to make.

There may also be a carrot cake in my future.  Because honestly, there should always be a carrot cake in my future.  Always.

In a related note, I really need to start doing Bikram Yoga again.  Not just because of my views regarding carrot cake and flan, but for a variety of reasons

    CARROT CAKE

    2 cups flour
    2 cups sugar
    2 tsp. Baking soda
    2 tsp cinnamon
    1 tsp salt
    1 cup salad oil
    4 eggs
    3 cups carrots, shredded
    1 tsp vanilla
    1 cup nuts, chopped (optional)
    8 ounces crushed pineapple, drained

    Preheat oven to 350. Sift dry ingredients together. Add the oil and eggs one at a time. Beat until thoroughly mixed. Add carrots, pineapple, nuts and vanilla. Mix well. Pour into greased and floured 9 X 13 inch pan, and bake for 45 minutes.

    ICING

    ½ cup butter softened
    1 pound confectioners sugar
    8 ounces cream cheese, softened
    1 tsp vanilla
    1 cup nuts, chopped

    Mix all ingredients together. Spread on top and sides of the cake.

    Note. Keep in refrigerator because of the cream cheese icing.
